Position: Assiatant Restaurant Suoervisor
Reports to: Restaurant supervisor /F & B Manager/Lodge Manager
Position Overview
We are a small upmarket exclusive hotel/beach resort that offers stylish personal services with a truly African alternative to western luxury. You are expected to pamper our clients and go the extra mile to maintain this high standard. We offer genuinely friendly and personal service giving guests time to relax in the privacy and space they came for.
You are required to enforce, maintain and contribute to the constant maintenance and improvement of the high standards set for Matemwe Lodge & Retreat.
Responsibilities and Duties
SWIMMING POOL BAR:
Specific Duties – Morning Shift:
- Clean & arrange seating area
- Sweep inside & outside of bar
- Ensure that all ashtrays are clean
- Clean bar
- Close stock
- Write stock requisitions
- Collect stock
- Make Juice
- Wash glasses & equipment
- Service at pool, rooms & beach. Serve drinks & clear glasses
- Take orders for snack menu
- Clean lantern glass
- Ensure that all bar sales are recorded accurately
- Hand-over to afternoon shift
Specific Duties – Afternoon Shift:
- Take-over stock from morning shift
- Service around the pool (at least once every hour) – serve drinks & clear glasses
- Ensure that all bar sales are recorded accurately
- Make breakfast juice
- Take orders for snack menu
- Make & actively sell cocktails
- Ensure that all ashtrays are clean
- Ensure that bar snacks are ready by 18h00
- Wash glasses & equipment
- Take dirty plates etc. from bar snacks to kitchen every evening
- Prepare bills & take to reception or give to manager on duty if reception is closed already
- Hand key in at reception
RESTAURANT BAR:
Specific Duties – Morning Shift:
- Clean bar
- Check the evening stock against morning stock
- Do summary of evening drinks served
- Write stock requisitions
- Collect stock
- Polish glasses for lunch service
- Service beach – at least once per hour (serve drinks & clear glasses)
- Serve lunch drinks to restaurant waiters
- Ensure that all bar sales are recorded accurately
- Hand-over to afternoon shift
Specific Duties – Afternoon Shift:
- Take-over stock from morning shift
- Clean bar
- Polish glasses for dinner service
- Service beach – at least once per hour (serve drinks & clear glasses)
- Get bar ready for dinner service – limes, ice etc.
- Serve dinner drinks to restaurant waiters
- Ensure that all bar sales are recorded accurately
- Ask guests to sign their bar bills
- Close the bar
- Take all the bar bills to reception
- Hand keys in at reception
In addition to one of the shifts above, your additional duties as the Head of Department are:
- Allocate duties & shifts
- Check both bars daily for cleanliness
- Go through stock variances with the Food & Beverage Manager
- Do monthly breakages report
- Do end of month stock takes
- Update the Fixed Asset Register monthly
- Ensure that all your staff fully understand the cocktail menu & wine list
Essential Job Functions
· Personal one on one guest interaction. Making sure each customer gets the individual attention we offer.
· Setting up your Bar for all service needs. You may be required to set up a bar on the beaches or where requested.
· Understanding the wines and drinks menus completely
· Taking orders for snack and drinks from all guest when on the beach and around the swimming pools Describe and recommend wines to customers.
· Stock service areas with supplies.
· Giving full attention to what other people are saying, taking time to understand the points being made, asking questions as appropriate, and not interrupting at inappropriate times. Talking to others to convey information effectively
· Mix ingredients, such as liquor, soda, water, sugar, and bitters, in order to prepare cocktails and other drinks.
· Serve wine, and bottled or draft beer.
· Collect money for drinks served from walk in guests.
· Arrange bottles and glasses to make attractive displays. Slice and pit fruit for garnishing drinks.
· Order or requisition liquors and supplies.
· Clean glasses, utensils, and bar equipment.
· Ask customers who become loud and obnoxious to leave, or call a manager.
· Attempt to limit problems and liability related to customers' excessive drinking by taking steps such as persuading customers to stop drinking, Balance cash receipts.
· Check identification of customers in order to verify age requirements for purchase of alcohol.
· Clean bars, work areas, and tables.
· Create drink recipes.
· Plan, organize, and control the operations of a cocktail lounge or bar.
· Serve snacks or food items to customers seated at the bar.
· Take beverage orders from serving staff or directly from clients.
· Bar maintenance – maintaining a tidy clear Bar at all times- empty glasses remove, ashtrays clear regularly.
· Always leave your bar ready for the next person.
· Make sure that all bills are signed off by the guest before leaving your area.
· If you become ill or cannot make it to work you must inform your manager before your shift starts so that we can make alternative arrangements.
· Hygiene and Health – you are required to bath and wash regularly
· You must be in full uniform when arriving down into the Bars.
· Prepare appetizers, such as pickles, cheese, and cold meats.
· You are to report to work on time.
